For anyone who might love the smoky, salty taste of bacon, but not the carcinogens or cruelty, tempeh bacon is available as Fakin’ Bacon Smoky Tempeh Strips from Lightlife or Treehouse Tempeh Smoky Maple Bacon from Tofurky. All you have to do is take it out of the package and fry it in a non-stick pan.
Tempeh is a fermented soybean cake. It’s a little less processed than tofu and is much firmer, with a nutty flavor. I love tempeh! You can make your own tempeh bacon very easily, but when I’m in a hurry and want to pack a quick lunch, I occasionally use packaged tempeh bacon. My husband tells me it doesn’t taste like pig bacon, but that it does have a nice smoky flavor and meaty texture. Here’s what’s in this yummy lunch:
- TLTA (Tempeh bacon, lettuce, tomato and avocado) on toasted whole grain bread – that’s the whole recipe
- Date almond clusters – look for these in the produce department at your local grocery store
- Baby carrots
- Raw sugar snap peas
